Coming soon … Bakery by Zique unveils a winning mix ahead of Hyndland opening

The new artisan bakery on Lauderdale Gardens is the latest outlet in the Hyndland empire that includes Cafezique and Delizique.

A funky new artisan bakery is set to open in Lauderdale Gardens.

The Bakery by Zique takes the place of Flowers & Design, which closed last Christmas, and is the newest addition to Mhairi Taylor’s Delizique and Cafezique empire in Hyndland Road.

It is to be managed by a former deli supremo with Carluccio’s in London, Glasgow-born Victoria Cameron (a cousin of Ruby Grimes of Ruby Flowers which used to be in Hyndland).

The head pastry chef is Lyndsay Michie, who trained at the double Michelin starred Restaurant Andrew Fairlie at Gleneagles and Le Gavroche in London’s Mayfair, and comes direct from Cottonrake in Great Western Road.

The master baker Ariel Soja has been with Delizique for nine years.

With the help of a newly installed Tom Chandley bread oven – you may spot it being delivered through the window space in the coming days - the team will produce a vast, daily-changing selection of breads and sweet and savoury goodies all baked on site.

Taylor is particularly pleased with the recent addition of baguettes and brioches to the range of sourdoughs and crusty white loaves.

Blowtorched citrus and lime meringue cassis tarts, beetroot cake, roulades, puff pastry tarts with a range of toppings including beetroot and orange, and pea, mint, broad beans, edamame beans, asparagus, crowdie and lemon zest; pork pies, cheese straws, individual quiches, and candied Portuguese almonds are just a flavour of what will be on offer.

There will also be range of soups at £2.50 each. Chicken laksa, Thai butternut squash, spiced cauliflower dhal, Scotch broth, summer minestrone are just some of them.

On top of this there will be a range of upscale deli-grocery items, such as Partick honey, Corrie mains eggs, Portuguese tinned fish, mackerel pate, and “great olives”. Look out also for honeycomb, pralines, truffles, marshmallows, tablet and dulce de leech.

With all this to organise it’s no wonder Mhairi Taylor, co-owner (with Tom, Lisa and Dick Lewis) of Mhor84, the motel off the A84 at Balquidder Glen in Perthshire, has been back in her old stomping ground of Glasgow’s West End so much recently.

Mhairi, who used to run Peckhams fruit shop on Clarence Drive, told Glasgow West End Today: “It’s very exciting to be opening a bakery in Hyndland.

"I find the community to be very supportive and they tell me they are really looking forward to having bread and cakes made on site here.

“Despite competition from the big boys, there are still good food and drink independents in the area like Peckhams, James Allan butchers, The Good Spirits Company and lots of cafes and bars which are well supported by the local community.”

She also revealed that Cafezique is to be repurposed to become a chicken parlour, serving a range of free-range dishes. Watch this space.
